This is what we’re having this week. Once again, I used Food on the Table to choose my menu items, and I chose Acme as my store of choice. We actually had the soy chicken tonight, and it was, er, ok. Just ok. I don’t know that I’d make it again, but it was edible.
Chicken 3x this week…not sure how I feel about that. But it felt like we had been eating too much beef lately. It’s why I added in two veggie meals this week too.
Caprese is one of our all time favorite foods, especially in summer. I got some really good tomatoes at Baily’s Dairy and Farm Market last week, so we’ll use those. Using fresh mozzarella takes some getting used to (the texture), so if your kids don’t like it, try using regular block mozz instead. We have fresh basil in our garden to add.
Another thing I like about Food on the Table, you can change the recipes to suit your taste. So I am changing the creole chicken tenders to what I like and adding them to my recipe box. I use Essence of Emeril, the store bought version. 1/3 cup canola oil to 1/3 cup seasoning and that’s my rub for Cajun Chicken Tenders. Note! These are VERY spicy. I get the big thing of Essence at BJs, one of the few things I go there for.
I love doing this menu planning–having a plan, printing everything out, having everything on hand, spending less at the grocery store–this is really helping me get through the busy weekdays.
