I’m breathing new life into old posts. This one was originally posted last January, but I’m updating it to add the modifications I’ve made and make it more printer friendly. It was originally in Family Fun magazine.

Great recipe to have on hand with school activities and functions coming up.

Ingredients
  • milk
  • 2 teaspoons of sugar per cup
  • ½ teaspoon of vanilla extract per cup
  • whipped cream
  • candy corn and chocolate chips

Instructions
  1. Warm some milk, adding 2 teaspoons of sugar per cup.
  2. Pour the mixture into mugs, stir ½ teaspoon of vanilla extract into each, then top with a dollop of whipped cream.
  3. Float a candy corn nose and chocolate chips for the smile and the eyes. Serve the drinks immediately.

Notes
Of course like most recipes, I’ve modified this. I do make regular hot cocoa and then just create the white snowman top with whipped cream. Or, sometimes I make white hot cocoa, but that mix is harder to find in stores. This one is sweet and good, and overall a good recipe for little ones who will enjoy the snowmen but you don’t want them having chocolate or they are allergic to chocolate.

Blog owner’s note: I’m digging into the archives and updating old posts. I found this one from 2008! I put the necessary information into the recipe plug in (easier for you to print!) and voila! I used to participate regularly in a parenting board, but haven’t in several years. That’s where this recipe came from. Even better, since 2008, I have been introduced to Rose Romano’s, so I can’t WAIT to try this with their products! (hint, hint, if you send me some, I’ll make it and update the post with photos!)

Easy, easy weeknight recipe for Moms! And these ingredients are so super easy to keep on hand.

Ingredients
  • You just take a tri-tip of beef (or some other cut that shreds nicely)
  • a jar of pepperoncinis (or however the heck you spell it!)
  • I’m going to try a jar of Rose Romano’s
  • ½ a jar full of water
  • I also add some garlic cloves and a bit of salt and pepper (garlic may no longer be necessary if you use Rose Romano’s)

Instructions
  1. Cook on low for 4-6 hours (when the meat falls apart, it’s done.)
  2. Shred it and serve on good sandwich rolls with yummy cheese.
  3. I just dump the whole peppers in. After cooking forever, they break apart pretty easily, but I like to keep them whole and just load ’em up!

Notes
I love it, and it makes the house smell yummy!

Broccoli Cheese soup

{recipe} Home Made Granola (no HFCS, either!)

A few months ago we decided to make an effort to cut HFCS (high fructose corn syrup). Now, we aren’t nuts about it but we figured if there were some places we could start cutting it, why not?  I had already made my own granola enough times that I had adapted a recipe to what I wanted. It is actually to the point that it can’t even be considered the original recipe. It’s from some random Mennonite Cookbook we used growing up.

It made it easier for me that I actually stock most of these items in my pantry so this may be easier for some than others. My recipe makes 49 oz. of cereal but you can easily half the recipe as that is what I started out with.


Home Made Granola
 
8.5 cups (28 oz.) rolled oats (quick or regular) 1 cup (4.5 oz.) unsweetened coconut flakes – sweetened is fine. 1 cup (4.5 oz.) raw sunflower seeds – I usually grind mine down finer. 2.5 cups(3.5 oz.) wheat brand flakes 2 tsp. ground cinnamon ½ cup (1.5 oz.) carob powder – cocoa powder is fine. A little harsher flavor. ¾ cup honey or brown sugar 1 cup water 1 Tablespoon vanilla ½ cup (4.5 oz.) raisins

  1. Preheat oven to 350.
  2. Mix all dry ingredients, except raisins, by hand or in your Kitchen Aid Mixer. (I don’t know how I would survive without my mixer.)
  3. Add honey, vanilla, and water. Mix well.
  4. Spread half the mixture on a large cookie sheet.
  5. Bake for 30 minutes. Pull out and mix with a spatula, every 10 minutes so the edges don’t burn.
  6. Pull out and add raisins to first batch. Finish baking the rest and mix all together.

Notes
I usually make it when I am trying to get other work done around the house because it just takes a few seconds to move around and pop back in the oven. You can try your own variations, like adding nuts or other dried fruits. We love adding craisins to ours. Store in an airtight container or ziploc bag and enjoy. Ours stays fresh for over a week – it rarely lasts that long in our house though.

The Pillsbury Grands and other similar rolls go on sale with coupons all the time. Here is an easy way to make them into a frugal and tasty breakfast dish. Your family or guests will think you spent hours on it.

Easy to make monkey bread, can even be done night before.

Ingredients
  • 1 container of Pillsbury Grands rolls
  • ¼ cup sugar
  • ¼ cup loosely packed brown sugar
  • 1 T cinnamon
  • ¼ cup raisins (optional)
  • ¼ cup nuts (optional)
  • 2 T butter, melted
  • Fresh fruit, for side

Instructions
  1. Preheat oven to 375
  2. Take the Grands rolls and cut each one into 4 pieces.
  3. In large zipper-top plastic bag, put Grands pieces, butter, sugar, cinnamon and raisins/nuts .
  4. Shake bag well until every piece is coated.
  5. Put pieces in a 9-inch cake or pie pan, or small fluted pan.
  6. Bake for 20 minutes
  7. Flip onto a serving dish when finished, serve with fruit if desired.
