So easy to make, I’ve tried this and it works!

Ingredients
  • 1 whole chicken, defrosted
  • 5-6 foil balls
  • seasonings as desired

Instructions
  1. Season chicken as desired
  2. place 5-6 foil balls on bottom of slow cooker
  3. cook 6 hours on low
  4. Chicken will fall apart when it’s done

Notes
I have done this recipe and it works. However, it does totally fall apart when it’s done, so be careful lifting it out. Also, I found mine to be a bit bland, but this is not unlike when I’ve done it in the oven. I seem to have troubled getting seasonings under the skin.

 

 

 

Chocolate Chip Biscotti recipe~inexpensive and easy!

This time of year, you are going to find baking goods and coupons everywhere! One of the items that we can usually get for very cheap is the Betty Crocker Cookie Pouches. I always have them on hand, but very rarely do I follow the directions on the packages. You can modify these to make other interesting and tasty recipes. One that I like is the chocolate chip biscotti.

Ingredients
  • 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
  • ⅓ cup butter or margarine, softened
  • 1 egg
  • ¼ cup Gold Medal® all-purpose flour
  • ½ cup toasted chopped hazelnuts
  • ½ cup cherry-flavored dried cranberries, coarsely chopped
  • 2 cups semisweet chocolate chips

Instructions
  1. Heat oven to 350°F.
  2. In large bowl, stir cookie mix, butter, egg, flour, hazelnuts, cranberries and 1½ cups chocolate chips until stiff dough forms.
  3. Shape half of dough at a time into 8×2½-inch rectangle on ungreased cookie sheet.
  4. Bake 20 to 25 minutes or until golden brown.
  5. Cool on cookie sheet 15 minutes.
  6. Cut crosswise into ¾-inch slices.
  7. Place slices, cut sides down, on cookie sheet.
  8. Bake 10 to 12 minutes, turning once, until crisp.
  9. Remove from cookie sheet to wire rack.
  10. Cool completely, about 20 minutes.
  11. In small microwavable bowl, microwave ½ cup chocolate chips on High 30 to 60 seconds; stir until smooth.
  12. Drizzle chocolate over one side of each biscotti.
  13. Let stand until chocolate is set.

Notes
The original recipe is from the Betty Crocker website. I modify it. Dried fruit ain’t my thing! And….this is how frugal I can be at times–you know the Green Giant boxed veggies? Well, those are our favorite boxed veggie and we always have tons of them. The green beans come with a little packet of almonds. Kids don’t like almonds in them, and I’m afraid they’ll choke. So I put them aside and use them for baking, usually in biscotti. So that is what I use instead of hazelnuts.

Use meal planning to save $$ at the grocery store
