Baked Pumpkin Oatmeal

Do you love pumpkin pie?  If so, this recipe is for you.

I will share my version of the dish and include a link to the original recipe but let me tell you, I LOVED this morning’s breakfast. Not only was it hearty and filling but it was delicious.

2 cups rolled oats
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon salt

I mixed these all together and then measured the  wet ingredients into a measuring cup –

3/4 cup pumpkin
2 tablespoons melted butter
Added fat free milk to 2 1/2 cup mark
2 teaspoons vanilla
1/3 cup maple syrup   (link for DIY “maple” syrup)
1 large egg, lightly beaten

Mix all ingredients together and pour into a greased baking dish. Bake at 375 for 20-25 minutes.

Best served with syrup(I made enough for the recipe and to serve with it) and milk.

H & R Block: File for FREE

Use H & R Block to file your state taxes for FREE. There is a fee to file your state taxes but every little bit counts. We have so many different things to take into account on our taxes that we have a  CPA do it for us. However, each year I will go do the free part so I can get a good idea of what we are looking at for taxes, whether it is owing or being owed to us.

The best part is it takes out the complication of tax numbers. You simply answer the questions and fill in the amounts they ask you and you are set.
